  • 1 large head green cabbage, cored and chopped into 1-inch pieces
  • 2 pounds Yukon Gold potatoes, peeled and cut into 1-inch chunks
  • 1.5 pounds smoked sausage, cut into 1/2-inch thick rounds
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt to taste

Instructions

  1. Place the chopped cabbage in the bottom of a large slow cooker.
  2. Layer the potatoes, smoked sausage, and chopped onion over the cabbage.
  3. Sprinkle the minced garlic, dried thyme, black pepper, paprika, and red pepper flakes (if using) evenly over the ingredients.
  4. Pour the chicken broth over everything.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the potatoes and cabbage are tender.
  6. Stir gently before serving. Taste and add salt if needed.

Notes

  • For a richer flavor, you can brown the sausage slightly in a skillet before adding it to the slow cooker.
