Description

A simple recipe for a chili and cornbread topping baked in a skillet.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can mild enchilada sauce
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Heat olive oil in a 10-inch oven-safe skillet over medium heat.
  3. Add ground beef, onion, and bell pepper. Cook until beef is browned and vegetables are soft, about 8 minutes.
  4. Drain excess fat from the skillet.
  5. Stir in garlic, kidney beans, diced tomatoes, enchilada sauce, chili powder, cumin, and oregano. Bring the mixture to a simmer.
  6. While the chili simmers, prepare the cornbread topping. In a medium bowl, whisk together cornmeal, flour, baking powder, and salt.
  7. In a separate small bowl, whisk the egg and milk. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  8. Stir the shredded cheddar cheese into the cornbread batter.
  9. Spoon the cornbread batter evenly over the simmering chili mixture in the skillet.
  10. Bake for 20 to 25 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
  11. Let the pot pie cool for 5 minutes before serving directly from the skillet.

Notes

  • You can substitute ground turkey for ground beef if desired.
  • For a spicier chili, add a pinch of cayenne pepper with the other spices.
