- 4 bone-in pork chops, about 1 inch thick
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 1/2 cup unsalted butter, melted
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon paprika
- 1/4 cup fresh parsley, chopped
- 2 pounds Yukon Gold potatoes, thinly sliced
- 1 cup heavy cream
- 1/2 cup milk
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 400°F (200°C).
- Season pork chops generously with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear pork chops for 2-3 minutes per side until golden brown. Remove from skillet and set aside.
- In a small bowl, whisk together melted butter, minced garlic, Italian seasoning, and paprika.
- Pour half of the garlic butter mixture into the skillet.
- Arrange sliced potatoes in the skillet with the garlic butter.
- Pour heavy cream and milk over the potatoes. Season with salt and pepper.
- Place the seared pork chops on top of the potatoes.
- Drizzle the remaining garlic butter over the pork chops.
- Cover the skillet with foil and bake for 20 minutes.
- Remove foil, sprinkle cheddar cheese over the potatoes and pork chops.
- Bake for another 10-15 minutes, or until pork chops are cooked through and cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
Notes
- Adjust cooking time based on the thickness of your pork chops.
- You can use boneless pork chops, but reduce cooking time slightly.
- Other cheese like Gruyere or Parmesan can be used.
