Ingredients

  • 4 bone-in pork chops, about 1 inch thick
  • Salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • 1/4 cup fresh parsley, chopped
  • 2 pounds Yukon Gold potatoes, thinly sliced
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season pork chops generously with salt and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Sear pork chops for 2-3 minutes per side until golden brown. Remove from skillet and set aside.
  5. In a small bowl, whisk together melted butter, minced garlic, Italian seasoning, and paprika.
  6. Pour half of the garlic butter mixture into the skillet.
  7. Arrange sliced potatoes in the skillet with the garlic butter.
  8. Pour heavy cream and milk over the potatoes. Season with salt and pepper.
  9. Place the seared pork chops on top of the potatoes.
  10. Drizzle the remaining garlic butter over the pork chops.
  11. Cover the skillet with foil and bake for 20 minutes.
  12. Remove foil, sprinkle cheddar cheese over the potatoes and pork chops.
  13. Bake for another 10-15 minutes, or until pork chops are cooked through and cheese is melted and bubbly.
  14. Garnish with fresh parsley before serving.

  • Adjust cooking time based on the thickness of your pork chops.
  • You can use boneless pork chops, but reduce cooking time slightly.
  • Other cheese like Gruyere or Parmesan can be used.
