A quick and flavorful hibachi-style chicken and vegetable dish cooked in your air fryer.

- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 cup sliced zucchini
- 1/2 cup sliced yellow onion
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon minced garlic
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon sesame oil
- Cooked rice, for serving
Instructions
- In a medium bowl, whisk together soy sauce, olive oil, honey, garlic, ginger, and sesame oil.
- Add the chicken pieces to the marinade and toss to coat. Let marinate for at least 15 minutes.
- Add the broccoli, carrots, zucchini, and onion to the bowl with the marinated chicken. Toss to combine.
- Preheat your air fryer to 400°F (200°C).
- Arrange the chicken and vegetables in a single layer in the air fryer basket. You may need to cook in batches.
- Air fry for 12-15 minutes, or until the chicken is cooked through and the vegetables are tender-crisp, shaking the basket halfway through.
- Serve immediately over cooked rice.
Notes
- For extra flavor, you can add a pinch of red pepper flakes to the marinade.
