Description
A hearty chili featuring slow-cooked short ribs and spicy chorizo sausage.

- 2 lbs beef short ribs, trimmed
- 1 lb ground chorizo sausage
- 2 large yellow onions, chopped
- 1 red bell pepper, chopped
- 4 cloves garlic, minced
- 2 (14.5 oz) cans diced tomatoes, undrained
- 1 (15 oz) can tomato sauce
- 1 (15 oz) can kidney beans, rinsed and drained
- 1 (15 oz) can black beans, rinsed and drained
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
Instructions
- Season short ribs generously with salt and pepper.
- In a large pot or Dutch oven, brown the short ribs on all sides over medium-high heat. Remove the ribs and set them aside.
- Add the chorizo to the pot and cook, breaking it up with a spoon, until browned. Drain off excess grease.
- Add the onions and bell pepper to the pot and cook until softened, about 5 minutes.
- Stir in the garlic, chili powder, cumin, oregano, and cayenne pepper (if using). Cook for 1 minute until fragrant.
- Return the short ribs to the pot. Add the diced tomatoes, tomato sauce, and beef broth.
- Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 2.5 to 3 hours, or until the short ribs are very tender.
- Remove the short ribs from the pot. Shred the meat using two forks, discarding any large pieces of fat or bone. Return the shredded meat to the pot.
- Stir in the kidney beans and black beans. Simmer uncovered for another 20 minutes to allow flavors to meld and the chili to thicken slightly.
- Taste and adjust seasoning with salt and pepper as needed before serving.
Notes
- For a thicker chili, remove the lid during the last 30 minutes of simmering.
- Serve with your preferred toppings like shredded cheese, sour cream, or chopped cilantro.
