Description
A delightful spaghetti dish featuring tender scallops and shrimp tossed in a rich, creamy white wine garlic sauce.
Ingredients
Scale
- 1 pound spaghetti
- 1 pound large shrimp, peeled and deveined
- 1 pound sea scallops, side muscle removed
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- 1 1/2 cups heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt and freshly ground black pepper to taste
Instructions
- Cook spaghetti according to package directions. Drain, reserving about 1 cup of pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat.
- Add shrimp and scallops to the skillet. Cook for 2-3 minutes per side, until opaque and lightly browned. Remove from skillet and set aside.
- Add minced garlic to the same skillet and cook for about 1 minute until fragrant.
- Pour in white wine and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes to reduce slightly.
- Stir in heavy cream and bring to a gentle simmer. Cook for 3-5 minutes, until the sauce thickens.
- Stir in Parmesan cheese and parsley. Season with salt and pepper.
- Return the cooked shrimp and scallops to the skillet. Toss to coat in the sauce.
- Add the drained spaghetti to the skillet. Toss gently to combine, adding a little reserved pasta water if needed to loosen the sauce.
- Serve immediately.
Notes
- For a richer sauce, you can add a tablespoon of butter along with the cream.
- Adjust the amount of garlic to your preference.
- If you don’t have white wine, you can substitute with chicken broth and a squeeze of lemon juice.
