- 6 boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 2 large yellow onions, thinly sliced
- 1 teaspoon granulated sugar
- 1 teaspoon dried thyme
- 1/2 cup dry white wine or chicken broth
- 4 cups beef broth
- 1 bay leaf
- Salt to taste
- Black pepper to taste
- 8 slices provolone cheese
- 1/2 cup shredded Gruyere cheese
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add sliced onions and sugar. Cook, stirring occasionally, for 20-25 minutes, until deeply caramelized and golden brown.
- Stir in dried thyme. Pour in white wine (or chicken broth) and scrape up any browned bits from the bottom of the pan. Cook for 2 minutes until liquid reduces slightly.
- Add beef broth and bay leaf. Bring to a simmer, then reduce heat to low and let it gently simmer for 10 minutes to allow flavors to meld. Remove bay leaf.
- Season chicken thighs with salt and pepper. Nestle chicken thighs into the onion soup mixture in the skillet.
- Arrange provolone cheese slices over the chicken and onions. Sprinkle with shredded Gruyere cheese.
- Bake for 20-25 minutes, or until chicken is cooked through (internal temperature reaches 165°F / 74°C) and cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
