  • 4 cups beef broth
  • 1 bay leaf

  • 8 slices provolone cheese
  • 1/2 cup shredded Gruyere cheese
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add sliced onions and sugar. Cook, stirring occasionally, for 20-25 minutes, until deeply caramelized and golden brown.
  3. Stir in dried thyme. Pour in white wine (or chicken broth) and scrape up any browned bits from the bottom of the pan. Cook for 2 minutes until liquid reduces slightly.

  7. Bake for 20-25 minutes, or until chicken is cooked through (internal temperature reaches 165°F / 74°C) and cheese is melted and bubbly.
