  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup chopped cooked bacon or ham (optional)

Instructions

  1. Preheat your waffle iron according to manufacturer directions.
  2. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, and pepper.
  3. In a separate bowl, whisk together the milk, vegetable oil, and eggs.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Fold in the shredded cheese and optional bacon or ham.
  6. Pour the batter onto the hot waffle iron and cook until golden brown and crisp, usually 4 to 6 minutes.
  7. Remove the waffle and repeat with the remaining batter.
