A simple and flavorful recipe for BBQ chicken and roasted sweet potato bowls.

- 1 pound boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 medium sweet potatoes, peeled and cubed
- 1/2 cup BBQ sauce
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the chicken thighs with olive oil, smoked paprika, garlic powder, salt, and pepper.
- Spread the seasoned chicken on one side of a baking sheet.
- On the other side of the baking sheet, toss the cubed sweet potatoes with a drizzle of olive oil, salt, and pepper.
- Roast for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender and slightly caramelized.
- Remove the chicken from the oven and shred it using two forks.
- Toss the shredded chicken with the BBQ sauce.
- Assemble the bowls by dividing the roasted sweet potatoes and BBQ chicken between them.
- Garnish with fresh cilantro before serving.
Notes
- You can substitute chicken breasts for thighs if preferred.
- Adjust the amount of BBQ sauce to your taste.
- Other toppings like chopped red onion or avocado can be added.
