A simple and flavorful recipe for BBQ chicken and roasted sweet potato bowls.


Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium sweet potatoes, peeled and cubed
  • 1/2 cup BBQ sauce
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the chicken thighs with olive oil, smoked paprika, garlic powder, salt, and pepper.
  3. Spread the seasoned chicken on one side of a baking sheet.
  4. On the other side of the baking sheet, toss the cubed sweet potatoes with a drizzle of olive oil, salt, and pepper.
  5. Roast for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender and slightly caramelized.
  6. Remove the chicken from the oven and shred it using two forks.
  7. Toss the shredded chicken with the BBQ sauce.
  8. Assemble the bowls by dividing the roasted sweet potatoes and BBQ chicken between them.
  9. Garnish with fresh cilantro before serving.

Notes

  • You can substitute chicken breasts for thighs if preferred.
