- 1 pound Italian sausage (sweet or hot), casings removed
- 1 large onion, chopped
- 2 bell peppers (any color), cored and sliced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup chicken broth
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 3 cups cooked white rice, for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add Italian sausage to the skillet and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- Add chopped onion and sliced bell peppers to the skillet. Cook, stirring occasionally, until vegetables are tender-crisp, about 5-7 minutes.
- Stir in diced tomatoes, chicken broth, dried oregano, and garlic powder. Bring to a simmer.
- Reduce heat to medium-low, cover, and cook for 10-15 minutes, or until vegetables are tender and flavors have melded.
- Season with salt and black pepper to taste.
- Serve hot over cooked white rice.
