Ingredients

  • 1 whole chicken (about 34 pounds)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Remove giblets from the chicken cavity. Pat the chicken dry with paper towels.
  3. In a small bowl, mix together olive oil, salt, pepper, paprika, garlic powder, and onion powder.
  4. Rub the spice mixture all over the chicken, including under the skin of the breast if possible.
  5. Place the chicken on a rotisserie spit or in a roasting pan.
  6. Roast for approximately 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
