- 1 whole chicken (about 3–4 pounds)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Instructions
- Preheat your oven to 400°F (200°C).
- Remove giblets from the chicken cavity. Pat the chicken dry with paper towels.
- In a small bowl, mix together olive oil, salt, pepper, paprika, garlic powder, and onion powder.
- Rub the spice mixture all over the chicken, including under the skin of the breast if possible.
- Place the chicken on a rotisserie spit or in a roasting pan.
- Roast for approximately 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
- Let the chicken rest for 10-15 minutes before carving.
Notes
- You can add herbs like rosemary or thyme to the cavity for extra flavor.
- Basting the chicken with its own juices during cooking can help keep it moist.
