Description
Rolo Ritz Cookies are a delightful no-bake treat combining the salty crunch of Ritz crackers with the sweet caramel chewiness of Rolo candies.

- 1 cup Rolo candies, unwrapped
- 1/4 cup butter
- 1 teaspoon vanilla extract
- 2 cups Ritz crackers, crushed
- 1/2 cup chopped pecans (optional)
Instructions
- Line a baking sheet with parchment paper.
- In a microwave-safe bowl, combine Rolo candies and butter. Microwave in 30-second intervals, stirring between each, until smooth and melted.
- Stir in the vanilla extract.
- Add the crushed Ritz crackers and chopped pecans (if using) to the melted Rolo mixture. Stir until everything is well combined.
- Drop rounded tablespoons of the mixture onto the prepared baking sheet.
- Let the cookies set at room temperature for about 30 minutes, or until firm.
Notes
- For a richer flavor, you can add a pinch of sea salt to the mixture.
- Store cookies in an airtight container at room temperature.
