A simple pasta dish featuring sweet roasted tomatoes and pungent garlic.
Ingredients

- 1 pound pasta (spaghetti or linguine)
- 2 pints cherry or grape tomatoes
- 6 cloves garlic, peeled
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh basil leaves, chopped
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Place the tomatoes and whole garlic cloves on a baking sheet.
- Drizzle with olive oil, salt, and pepper. Toss to coat.
- Roast for 25 to 30 minutes, until the tomatoes burst and the garlic is soft.
- While the vegetables roast, cook the pasta according to package directions until al dente. Reserve about 1 cup of the pasta water before draining.
- Transfer the roasted tomatoes and garlic to a large bowl. Mash the garlic cloves with a fork.
- Add the drained pasta to the bowl with the roasted vegetables.
- Add the chopped basil and Parmesan cheese. Toss everything together. Add reserved pasta water, a little at a time, until a light sauce forms.
- Serve immediately.
Notes
- Use any long pasta shape you prefer.
- For extra flavor, add a pinch of red pepper flakes before roasting.
