  • 2 oz cream cheese, softened
  • 2 tbsp Greek yogurt
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 25-30 minutes, or until tender and lightly browned.
  4. While carrots roast, combine feta cheese, cream cheese, Greek yogurt, minced garlic, and lemon juice in a food processor.
  5. Process until smooth and creamy.
  6. Stir in chopped dill.
  7. Serve roasted carrots with the whipped feta dip.
