Ingredients

- 1 lb carrots, peeled and cut into 1-inch pieces
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- 6 oz feta cheese, crumbled
- 2 oz cream cheese, softened
- 2 tbsp Greek yogurt
- 1 clove garlic, minced
- 1 tbsp lemon juice
- 1 tbsp fresh dill, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Toss carrots with olive oil, salt, and pepper on a baking sheet.
- Roast for 25-30 minutes, or until tender and lightly browned.
- While carrots roast, combine feta cheese, cream cheese, Greek yogurt, minced garlic, and lemon juice in a food processor.
- Process until smooth and creamy.
- Stir in chopped dill.
- Serve roasted carrots with the whipped feta dip.
Notes
- You can add other spices like cumin or paprika to the carrots before roasting.
- For a smoother dip, add a tablespoon of water or milk.
- Garnish with extra dill or a drizzle of olive oil.
