Ingredients

  • 3 medium carrots, peeled and sliced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Place the broccoli florets and carrot slices in a large bowl.
  3. Drizzle the vegetables with olive oil.
  4. Sprinkle with salt, pepper, and garlic powder. Toss to coat evenly.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast for 20 to 25 minutes, stirring halfway through, until the vegetables are tender and lightly browned.
  7. Remove from the oven and serve immediately.

Notes

  • For crispier edges, you can increase the oven temperature to 425 degrees Fahrenheit for the last 5 minutes of cooking.
  • You can substitute other root vegetables like parsnips or potatoes for the carrots.
