Description
A simple, refreshing mocktail made with roasted apples and pears.
Ingredients

- 2 medium apples
- 2 ripe pears
- 2 cups water
- 1/4 cup sugar
- 1 cinnamon stick
- 1 star anise
- 1 cup sparkling water, chilled
- Ice cubes
- Apple slices for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Core and chop the apples and pears into rough chunks. Do not peel.
- Place the fruit in a small baking dish.
- In a small saucepan, combine the water, sugar, cinnamon stick, and star anise. Heat gently until the sugar dissolves, stirring occasionally. Do not boil.
- Pour half of the sugar syrup over the fruit. Reserve the remaining syrup.
- Roast the fruit for 20 to 25 minutes, until soft and slightly caramelized.
- Remove the fruit from the oven and let it cool slightly.
- Transfer the roasted fruit and the remaining reserved syrup to a blender. Blend until smooth.
- Strain the mixture through a fine-mesh sieve into a pitcher, pressing down on the solids to extract all liquid. Discard the solids. You now have the fruit base.
- To serve, fill glasses with ice. Pour one part fruit base and one part chilled sparkling water into each glass. Stir gently.
- Garnish each drink with an apple slice.
Notes
- You can roast the fruit ahead of time and store the base in the refrigerator for up to three days.
- Adjust the amount of sugar in the syrup based on the sweetness of your fruit.
