Ingredients

- 1 bunch kale, stems removed and chopped
- 1 cup fresh blueberries
- 2 ripe peaches, pitted and sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup pecans, chopped
- For the dressing:
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon honey
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, massage the chopped kale with a drizzle of olive oil for 1-2 minutes until softened.
- Add the blueberries, sliced peaches, red onion, and chopped pecans to the bowl.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey, and Dijon mustard.
- Season the dressing with salt and pepper to your preference.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately.
Notes
- For a creamier dressing, add a tablespoon of Greek yogurt.
- Add grilled chicken or shrimp for a more substantial meal.
