Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup almond flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1 large egg yolk
  • 2 tablespoons ice water
  • 1 cup heavy cream
  • 1/4 cup granulated sugar
  • 2 large egg yolks
  • 1/4 cup almond paste
  • 1 teaspoon vanilla extract
  • 2 cups fresh raspberries
  • 2 tablespoons sliced almonds, for topping

Instructions

  1. In a bowl, whisk together all-purpose flour, almond flour, sugar, and salt.
  2. Cut in cold butter until the mixture resembles coarse crumbs.
  3. In a small bowl, whisk together egg yolk and ice water. Add to the flour mixture and mix until just combined.
  4. Shape dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  5. Preheat oven to 375°F (190°C).
  6. On a lightly floured surface, roll out dough to fit a 9-inch tart pan with removable bottom. Press dough into the pan and up the sides. Prick the bottom with a fork.
  7. Line the tart shell with parchment paper and fill with pie weights or dried beans.
  8. Bake for 15 minutes. Remove parchment and weights, bake for another 10-15 minutes, or until golden brown. Let cool completely.
  9. While the crust cools, prepare the almond cream. In a bowl, whisk together heavy cream, sugar, and egg yolks until smooth.
  10. In a separate bowl, whisk almond paste until smooth. Gradually whisk in the cream mixture until well combined.
  11. Stir in vanilla extract.
  12. Pour the almond cream into the cooled tart shell.
  13. Arrange raspberries over the almond cream.
  14. Sprinkle sliced almonds over the top.
  15. Bake for 25-30 minutes, or until the filling is set and lightly golden.
  16. Let the tart cool completely before serving.

  • For a richer flavor, you can toast the sliced almonds before sprinkling them on top.
