Description

A quick and easy stir fry using ramen noodles and fresh vegetables.


Ingredients

  • 2 packages instant ramen noodles (discard seasoning packets)
  • 1 tablespoon vegetable oil
  • 1 cup sliced carrots
  • 1 cup broccoli florets
  • 1/2 cup sliced bell pepper (any color)
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce (optional)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil

Instructions

  1. Cook ramen noodles according to package directions until tender. Drain well and set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add carrots and broccoli. Stir fry for 3 minutes until slightly tender.
  4. Add bell pepper and minced garlic. Stir fry for 2 more minutes.
  5. Add the cooked, drained noodles to the skillet.
  6. In a small bowl, whisk together soy sauce, oyster sauce (if using), and rice vinegar.
  7. Pour the sauce mixture over the noodles and vegetables. Toss everything together until well combined and heated through, about 2 minutes.
  8. Remove from heat and stir in sesame oil. Serve immediately.

  • You can add cooked protein like chicken or tofu if desired.
