Description

Fluffy and tender doughnuts made from a yeasted dough, deep-fried to a golden brown and often glazed.


Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1/2 cup warm milk
  • 1/4 cup warm water
  • 1/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/4 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 4 cups all-purpose flour, plus more for dusting
  • Vegetable oil, for frying
  • Glaze ingredients (powdered sugar, milk, vanilla)

Instructions

  1. In a small bowl, combine yeast, warm milk, and warm water. Let stand for 5-10 minutes, or until foamy.
  2. In a large bowl or the bowl of a stand mixer, whisk together sugar, eggs, melted butter, vanilla extract, and salt.
  3. Add the yeast mixture to the egg mixture and stir to combine.
  4. Gradually add the flour, mixing until a soft dough forms.
  5. Knead the dough on a lightly floured surface for 8-10 minutes, or until smooth and elastic. If using a stand mixer, knead with the dough hook for 6-8 minutes.
  6. Place the dough in a lightly greased bowl, cover with plastic wrap, and let rise in a warm place for 1-2 hours, or until doubled in size.
  7. Punch down the dough and turn it out onto a lightly floured surface. Roll the dough to about 1/2 inch thickness.
  8. Cut out doughnuts using a doughnut cutter or two round cutters of different sizes.
  9. Place the cut doughnuts on parchment-lined baking sheets, cover loosely with plastic wrap, and let rise for another 30-45 minutes.
  10. Heat about 3 inches of vegetable oil in a deep pot or Dutch oven to 360-375°F (180-190°C).
  11. Carefully fry the doughnuts in batches, about 2-3 minutes per side, until golden brown.
  12. Remove doughnuts with a slotted spoon and drain on paper towels.
  13. Dip warm doughnuts in glaze or sprinkle with powdered sugar.
