Ingredients

  • 1 (20 ounce) can pineapple chunks, drained, juice reserved
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat grill to medium-high heat.
  2. In a large bowl, whisk together reserved pineapple juice, soy sauce, brown sugar, vegetable oil, garlic, ginger, and pepper.
  3. Add chicken and pineapple chunks to the marinade. Toss to coat.
  4. Thread chicken and pineapple onto skewers.
  5. Grill for 15-20 minutes, turning occasionally, until chicken is cooked through and pineapple is caramelized.
  6. Serve immediately.
