A rolled cake flavored with pumpkin and warm spices.

- 1 cup pumpkin puree
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon

- 1/8 teaspoon ground cloves
- 1/4 teaspoon salt
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375 degrees F. Line a 15×10 inch jelly roll pan with parchment paper and lightly grease.
- In a large bowl, beat the pumpkin puree, eggs, granulated sugar, and 1 teaspoon vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 12 to 15 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake bakes, place a clean kitchen towel on a flat surface and dust it lightly with powdered sugar.
- Immediately invert the hot cake onto the prepared towel. Peel off the parchment paper. Starting at a short end, roll the cake and towel together tightly. Let it cool completely in this rolled position on a wire rack.
- To make the filling, beat the softened cream cheese and butter together until smooth.
- Gradually add the powdered sugar and 1 teaspoon vanilla extract, beating until the frosting is light and fluffy.
- Once the cake is cool, carefully unroll it. Spread the cream cheese filling evenly over the cake surface.
- Roll the cake up again, without the towel, and place it seam-side down on a serving plate.
- Chill for at least 30 minutes before slicing and serving.
Notes
- You can dust the finished roll with extra powdered sugar for presentation.
- Make sure the cake is completely cool before adding the filling to prevent melting.
