Description

Instructions

  1. Preheat your oven to 350 degrees F. Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and 1/2 cup granulated sugar until light and fluffy.
  3. Beat in the egg and 1 teaspoon vanilla extract.
  4. In a separate bowl, whisk together the pumpkin pie spice, baking soda, salt, and flour. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the pumpkin puree until incorporated. Do not overmix.
  6. For the filling, beat the softened cream cheese, 1/4 cup granulated sugar, and 1/2 teaspoon vanilla extract until smooth.
  7. Scoop about 1 tablespoon of pumpkin cookie dough and flatten it slightly in your palm. Place about 1/2 teaspoon of the cream cheese filling in the center. Gently wrap the dough around the filling, forming a ball. Place on the prepared baking sheet.
  8. Bake for 10 to 12 minutes, or until the edges are set.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
