Description

A recipe for moist pumpkin bread topped with a simple cream cheese frosting.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For Frosting: 4 ounces cream cheese, softened
  • For Frosting: 1/4 cup unsalted butter, softened
  • For Frosting: 2 cups powdered sugar
  • For Frosting: 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, mix the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract until combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
  8. To make the frosting, beat the softened cream cheese and butter together until smooth.
  9. Gradually add the powdered sugar and vanilla extract, beating until the frosting is light and fluffy.
  10. Once the bread is completely cool, spread the cream cheese frosting evenly over the top.

Notes

  • Use canned pumpkin puree, not pumpkin pie filling.
  • You can substitute pumpkin pie spice for the individual spices listed.
  • For a thicker frosting, use slightly less vanilla extract.
