- 1 (3 pound) boneless pork loin roast
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the pork loin dry with paper towels.
- In a small bowl, mix together the olive oil, rosemary, thyme, garlic powder, salt, and pepper.
- Rub the herb mixture all over the pork loin.
- Place the pork loin in a roasting pan.
- Roast for 20 minutes per pound, or until the internal temperature reaches 145°F (63°C) on a meat thermometer.
- Let the pork loin rest for 10-15 minutes before slicing and serving.
Notes
- For a crispier exterior, you can sear the pork loin in a hot skillet for 2-3 minutes per side before roasting.
- Serve with your favorite roasted vegetables or mashed potatoes.
