- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon Dijon mustard

- Fresh parsley, chopped for garnish
Instructions
- Season pork chops with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear pork chops for 3-4 minutes per side, until golden brown. Remove from skillet and set aside.
- Add chopped onion to the skillet and cook until softened, about 3-5 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
- Reduce heat to medium-low and stir in heavy cream and Dijon mustard.
- Return pork chops to the skillet. Cover and simmer for 5-7 minutes, or until pork chops are cooked through.
- Garnish with fresh parsley before serving.
