A fusion dish combining the flavors of pizza and enchiladas.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 (15 ounce) can tomato sauce
- 1 (10.75 ounce) can condensed tomato soup
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes
- 10 flour tortillas
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat oven to 375 degrees F (190 degrees C). Grease a 9×13 inch baking dish.
- Brown ground beef in a large skillet over medium heat. Drain excess fat.
- Stir in onion and green pepper; cook until softened.
- Add tomato sauce, tomato soup, oregano, basil, garlic powder, and red pepper flakes. Simmer for 10 minutes.
- Spoon a small amount of sauce into the bottom of the prepared baking dish.
- Fill each tortilla with some of the meat mixture and a sprinkle of mozzarella cheese. Roll up tortillas and place seam-side down in the baking dish.
- Pour remaining sauce over the enchiladas. Sprinkle with remaining mozzarella cheese and Parmesan cheese.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
Notes
- You can substitute ground turkey or chicken for ground beef.
- Add other pizza toppings like mushrooms, olives, or pepperoni.
- Serve with a side salad or garlic bread.
