Description

A fusion dish combining the flavors of pizza and enchiladas.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 (15 ounce) can tomato sauce
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes
  • 10 flour tortillas
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9×13 inch baking dish.
  2. Brown ground beef in a large skillet over medium heat. Drain excess fat.
  3. Stir in onion and green pepper; cook until softened.
  4. Add tomato sauce, tomato soup, oregano, basil, garlic powder, and red pepper flakes. Simmer for 10 minutes.
  5. Spoon a small amount of sauce into the bottom of the prepared baking dish.
  6. Fill each tortilla with some of the meat mixture and a sprinkle of mozzarella cheese. Roll up tortillas and place seam-side down in the baking dish.
  7. Pour remaining sauce over the enchiladas. Sprinkle with remaining mozzarella cheese and Parmesan cheese.
  8. Bake for 20-25 minutes, or until cheese is melted and bubbly.

Notes

  • You can substitute ground turkey or chicken for ground beef.
  • Add other pizza toppings like mushrooms, olives, or pepperoni.
  • Serve with a side salad or garlic bread.
