A simple recipe combining ground beef, pizza flavors, and enchilada preparation.

- 1 pound ground beef
- 1 small onion, chopped
- 1 (10 ounce) can enchilada sauce
- 1 cup pizza sauce
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- 12 corn tortillas
- 2 cups shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
- Brown the ground beef and onion in a skillet over medium heat. Drain any excess fat.
- Stir in the chili powder, cumin, and garlic powder with the beef mixture. Cook for one minute.
- In a small bowl, mix the enchilada sauce and pizza sauce together.
- Dip each tortilla briefly into the sauce mixture to soften it.
- Spoon a small amount of the beef mixture down the center of each tortilla. Roll up the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with remaining tortillas.
- Pour the remaining sauce mixture evenly over the rolled tortillas.
- Sprinkle the mozzarella and cheddar cheeses over the top.
- Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the dish is heated through.
Notes
- You can warm the tortillas in the microwave for 30 seconds before dipping to make them more pliable.
- Use your favorite brand of enchilada sauce.
