A quick and easy dessert salad featuring pistachio pudding, pineapple, and whipped topping.

- 1 (3.4 ounce) package instant pistachio pudding mix
- 1 (20 ounce) can crushed pineapple, undrained
- 1 (8 ounce) container frozen whipped topping, thawed
- 1 1/2 cups miniature marshmallows
- 1 cup chopped pecans (optional)
Instructions
- In a large bowl, combine the dry pudding mix and the undrained crushed pineapple.
- Stir until well combined and the pudding mix is dissolved.
- Fold in the thawed whipped topping.
- Gently stir in the miniature marshmallows and chopped pecans (if using).
- Cover and refrigerate for at least 1 hour before serving.
Notes
- You can substitute other canned fruits for the pineapple, such as mandarin oranges or fruit cocktail.
- Add shredded coconut for extra flavor and texture.
- This salad is best served chilled.
