Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup shredded sweetened coconut
  • 1/2 cup powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon almond extract
  • 1 drop pink food coloring

Instructions

  1. Preheat your oven to 350 degrees F. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides.
  2. In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the vanilla extract.
  4. In a separate bowl, whisk together the flour, salt, and shredded coconut.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Press the mixture evenly into the bottom of the prepared baking pan.
  7. Bake for 18 to 20 minutes, or until the edges are lightly golden. Let the crust cool completely on a wire rack.
  8. To make the glaze, whisk together the powdered sugar, milk, almond extract, and pink food coloring in a small bowl until smooth.
  9. Pour the glaze over the cooled crust and spread it evenly.
  10. Allow the glaze to set for at least 30 minutes before cutting into bars.
  11. Lift the bars out of the pan using the parchment overhang and cut into squares.

Notes

  • For a firmer bar, chill the bars for 15 minutes after the glaze sets before cutting.
  • You can substitute regular coconut extract for almond extract if you prefer.
