Description

A refreshing homemade lemonade flavored with fresh pineapple and mint.


Ingredients

  • 4 cups water
  • 1 cup fresh pineapple, chopped
  • 1/2 cup fresh lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup fresh mint leaves
  • Ice cubes

Instructions

  1. Combine the chopped pineapple, sugar, and 1 cup of water in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Simmer for 5 minutes.
  2. Remove the saucepan from the heat. Add the mint leaves to the hot mixture and let it steep for 15 minutes.
  3. Strain the pineapple-mint syrup through a fine-mesh sieve into a pitcher, pressing on the solids to extract all liquid. Discard the solids.
  4. Add the remaining 3 cups of water and the fresh lemon juice to the pitcher. Stir well.
  5. Chill the lemonade in the refrigerator for at least 1 hour before serving. Serve over ice.
