A refreshing homemade lemonade flavored with fresh pineapple and mint.
Ingredients

- 4 cups water
- 1 cup fresh pineapple, chopped
- 1/2 cup fresh lemon juice
- 1/2 cup granulated sugar
- 1/4 cup fresh mint leaves
- Ice cubes
Instructions
- Combine the chopped pineapple, sugar, and 1 cup of water in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Simmer for 5 minutes.
- Remove the saucepan from the heat. Add the mint leaves to the hot mixture and let it steep for 15 minutes.
- Strain the pineapple-mint syrup through a fine-mesh sieve into a pitcher, pressing on the solids to extract all liquid. Discard the solids.
- Add the remaining 3 cups of water and the fresh lemon juice to the pitcher. Stir well.
- Chill the lemonade in the refrigerator for at least 1 hour before serving. Serve over ice.
Notes
- Adjust the amount of sugar or lemon juice to match your taste preference.
- For a sparkling version, substitute 1 cup of still water with club soda or sparkling water.
