Ingredients

  • 250g unsalted butter, softened
  • 70g icing sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 300g all-purpose flour
  • 100g cornstarch
  • 200g pineapple jam

Instructions

  1. Cream butter and icing sugar until light and fluffy.
  2. Beat in egg yolk and vanilla extract.
  3. Sift in flour and cornstarch, mix until just combined.
  4. Dough will be soft; wrap and chill for 30 minutes.
  5. Preheat oven to 160°C (320°F). Line baking sheets with parchment paper.
  6. Roll out dough to 0.5cm thickness. Cut into desired shapes.
  7. Place shapes on baking sheets. Make a small indentation in the center of each.
  8. Spoon a small amount of pineapple jam into the indentation.
  9. Bake for 12-15 minutes, or until lightly golden.
  10. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
