- 8 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup crushed pineapple, drained
- 1/4 cup heavy cream
- 1/4 cup chopped pecans (optional)
- Graham cracker crust
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, beat cream cheese and sugar until smooth.
- Beat in egg and vanilla extract.
- Stir in drained crushed pineapple and heavy cream.
- Pour filling into graham cracker crust.
- Bake for 30-35 minutes, or until the center is set.
- Let cool completely before chilling.
- Top with chopped pecans if desired.
Notes
- For a smoother filling, ensure cream cheese is fully softened.
- Drain pineapple very well to prevent a watery cheesecake.
- Chilling overnight results in the best texture.
