Description

Ingredients

- 1 cup chopped cucumber
- 1/4 cup chopped red onion
- 2 tablespoons chopped fresh mint
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt to taste

Instructions
- Combine pineapple, cucumber, red onion, and mint in a large bowl.
- In a small bowl, whisk together lime juice and olive oil.
- Pour dressing over the salad and toss to coat.
- Season with salt and pepper to taste.
- Serve immediately or chill before serving.
Notes
- For a spicier salad, add a pinch of red pepper flakes to the dressing.
- You can substitute cilantro for mint if desired.
