Description
Sweet and spicy candied pineapple slices with jalapeños.
Ingredients

- 1 fresh pineapple, peeled, cored, and sliced
- 2 jalapeño peppers, thinly sliced
- 2 cups granulated sugar
- 1 cup apple cider vinegar
- 1 teaspoon ground turmeric
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
Instructions
- Combine sugar, vinegar, turmeric, red pepper flakes, ginger, and cloves in a large pot.
- Bring to a boil over medium-high heat, stirring until sugar dissolves.
- Reduce heat to low and add pineapple slices and jalapeño slices.
- Simmer for 30-45 minutes, or until pineapple is translucent and syrup has thickened.
- Remove pineapple and jalapeños from the pot using a slotted spoon.
- Pack pineapple and jalapeños into sterilized jars.
- Pour hot syrup over the pineapple and jalapeños, leaving 1/2 inch headspace.
- Wipe rims clean and seal jars with lids and rings.
- Process jars in a boiling water bath for 10 minutes.
- Let jars cool completely before storing in a cool, dark place.
Notes
- Adjust the amount of jalapeños to control the level of spiciness.
- For extra heat, leave some of the jalapeño seeds in.
- This recipe makes a great condiment for grilled meats or a topping for cream cheese and crackers.
