Description

Sweet and spicy candied pineapple slices with jalapeños.


Ingredients

  • 1 fresh pineapple, peeled, cored, and sliced
  • 2 jalapeño peppers, thinly sliced
  • 2 cups granulated sugar
  • 1 cup apple cider vinegar
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves

Instructions

  1. Combine sugar, vinegar, turmeric, red pepper flakes, ginger, and cloves in a large pot.
  2. Bring to a boil over medium-high heat, stirring until sugar dissolves.
  3. Reduce heat to low and add pineapple slices and jalapeño slices.
  4. Simmer for 30-45 minutes, or until pineapple is translucent and syrup has thickened.
  5. Remove pineapple and jalapeños from the pot using a slotted spoon.
  6. Pack pineapple and jalapeños into sterilized jars.
  7. Pour hot syrup over the pineapple and jalapeños, leaving 1/2 inch headspace.
  8. Wipe rims clean and seal jars with lids and rings.
  9. Process jars in a boiling water bath for 10 minutes.
  10. Let jars cool completely before storing in a cool, dark place.

Notes

  • Adjust the amount of jalapeños to control the level of spiciness.
  • For extra heat, leave some of the jalapeño seeds in.
  • This recipe makes a great condiment for grilled meats or a topping for cream cheese and crackers.
