- 1 box yellow cake mix
- 1 (3.4 ounce) package instant vanilla pudding mix
- 4 large eggs
- 1/2 cup vegetable oil
- 1 cup milk
- 1 (8 ounce) can crushed pineapple, undrained
- 1 cup flaked coconut
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- 1/2 cup flaked coconut, toasted (for garnish)
- Maraschino cherries (for garnish)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, combine cake mix, pudding mix, eggs, oil, and 1 cup milk. Beat with an electric mixer on medium speed for 2 minutes.
- Stir in crushed pineapple and 1 cup flaked coconut. Pour batter into the prepared baking pan.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cake cool completely in the pan on a wire rack.
- While the cake cools, prepare the frosting. In a medium bowl, beat softened cream cheese and butter until smooth and creamy.
- Gradually add powdered sugar, beating until well combined. Beat in vanilla extract and 2 tablespoons milk until the frosting is light and fluffy.
- Once the cake is completely cool, spread the cream cheese frosting evenly over the top.
- Garnish with toasted coconut and maraschino cherries, if desired.
- Slice and serve.
Notes
- Ensure all ingredients for the cake and frosting are at room temperature for best results.
- To toast coconut, spread it in a single layer on a baking sheet and bake at 325°F (160°C) for 5-10 minutes, stirring occasionally, until golden brown.
- This cake tastes even better the next day.
