Instructions
- Preheat oven to 400°F (200°C).
- Chop all vegetables into similar-sized pieces.
- In a large bowl, toss vegetables with olive oil, salt, pepper, and garlic powder.
- Spread vegetables in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until tender and slightly caramelized.
- Serve immediately.
