- 6 cups fresh or frozen sliced peaches
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 cup water
- 1 tablespoon lemon juice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Instructions
- Combine the sliced peaches, sugar, lemon juice, cinnamon, and nutmeg in a medium saucepan.
- In a small bowl, whisk together the cornstarch and water until smooth.
- Pour the cornstarch mixture over the peaches in the saucepan.
- Cook over medium heat, stirring constantly, until the mixture thickens and bubbles. This usually takes about 5 to 8 minutes.
- Remove from heat and let cool slightly before using in your pie crust.
Notes
- If using frozen peaches, do not thaw them before using.
- You can substitute almond extract for the lemon juice for a different flavor profile.
