Description

A simple recipe for peach cobbler flavored overnight oats, prepared ahead of time.


Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/4 cup diced fresh or frozen peaches
  • Pinch of cinnamon

Instructions

  1. Combine the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, and vanilla extract in a jar or container.
  2. Stir well until all ingredients are mixed.
  3. Gently fold in the diced peaches and cinnamon.
  4. Seal the container and refrigerate for at least 6 hours, or preferably overnight.
  5. In the morning, stir the oats before serving. Add a splash more milk if the consistency is too thick.

Notes

  • For a warmer flavor, add a small pinch of nutmeg with the cinnamon.
  • If using frozen peaches, they will release more liquid as they thaw.
  • You can top with a few chopped pecans before eating for added crunch.
