Description
Sweet and smooth peach butter, perfect for spreading on toast or as a topping for desserts.
Ingredients
Scale
- 4 pounds ripe peaches, peeled, pitted, and chopped
- 1 1/2 cups granulated sugar
- 1/4 cup lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Instructions
- Combine peaches, sugar, lemon juice, cinnamon, and nutmeg in a large, heavy-bottomed pot.
- Bring the mixture to a boil over medium-high heat, stirring constantly.
- Reduce heat to low and simmer, stirring occasionally, for 1 to 1.5 hours, or until the peaches are very soft and the mixture has thickened.
- Remove from heat and let cool slightly.
- Carefully transfer the mixture to a blender or food processor and blend until smooth. Alternatively, use an immersion blender directly in the pot.
- Return the peach butter to the pot and simmer for another 15-30 minutes, or until it reaches your desired consistency. It should be thick enough to hold its shape on a spoon.
- Ladle the hot peach butter into sterilized jars, leaving 1/4 inch headspace.
- Process in a boiling water canner for 10 minutes (adjust for altitude if necessary).
- Cool jars on a wire rack until sealed. Store in a cool, dark place for up to 1 year.
Notes
- Choose ripe, fragrant peaches for the best flavor.
- Adjust sugar to your preference based on the sweetness of your peaches.
- For a chunkier butter, do not blend completely smooth.
- Peach butter can be stored in the refrigerator for up to 3 weeks if not canned.
