Simple Spaghetti Aglio e Olio

Description

A quick and classic Italian pasta dish with garlic and oil.


Ingredients

  • 8 ounces spaghetti
  • 1/4 cup olive oil
  • 4 cloves garlic, thinly sliced
  • 1/4 teaspoon red pepper flakes
  • Salt to taste
  • 2 tablespoons chopped fresh parsley
  • Grated Parmesan cheese, for serving

Instructions

  1. Cook spaghetti according to package directions. Reserve about 1/2 cup of the pasta water before draining.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium-low heat. Add the sliced garlic and red pepper flakes. Cook, stirring, until the garlic is lightly golden, about 3-5 minutes. Do not let the garlic burn.
  3. Add the drained spaghetti to the skillet with the garlic and oil. Toss to coat.
  4. Add about 1/4 cup of the reserved pasta water to the skillet. Toss well, adding more pasta water if needed to create a light sauce that coats the pasta.
  5. Season with salt to taste. Stir in the chopped parsley.
  6. Serve immediately, topped with grated Parmesan cheese if desired.

Notes

  • For extra flavor, you can add a squeeze of lemon juice at the end.
  • Adjust the red pepper flakes to your spice preference.
