- 2 lbs small red potatoes, quartered
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the quartered potatoes with olive oil, garlic powder, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on a large baking sheet.
- Roast for 20 minutes, then flip the potatoes.
- Sprinkle the Parmesan cheese over the potatoes.
- Continue roasting for another 15-20 minutes, or until the potatoes are tender and golden brown and the cheese is crispy.
- Garnish with fresh parsley before serving.
Notes
- For extra crispiness, soak the cut potatoes in cold water for 30 minutes before roasting, then pat them completely dry.
