Simple recipe for roasting carrots coated in Parmesan cheese and garlic.
Ingredients

- 1 pound carrots, peeled and cut into uniform pieces
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Toss the cut carrots with olive oil and minced garlic in a bowl.
- Spread the carrots in a single layer on a baking sheet.
- Roast for 20 minutes.
- Remove the baking sheet from the oven. Sprinkle the carrots evenly with Parmesan cheese, salt, and pepper.
- Return the carrots to the oven and roast for another 5 to 10 minutes, or until the cheese is melted and lightly browned and the carrots are tender.
- Serve immediately.
Notes
- Cut carrots into similar sizes so they cook evenly.
- You can add a pinch of dried parsley for color before serving.
