  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
  2. Stir in flour, salt, and 1/4 cup olive oil until a shaggy dough forms.
  3. Turn out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  4. Lightly oil the same bowl, place dough in it, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. Punch down the dough. Divide into two equal pieces.
  6. Heat a 10-inch non-stick skillet over medium heat with 1 tablespoon of olive oil.
  7. Press one piece of dough into the skillet, forming a disc.
  8. Sprinkle half of the mozzarella, Parmesan, oregano, and garlic powder over the dough.
  9. Cover the skillet and cook for 8-10 minutes, or until the bottom is golden brown and cooked through.
  10. Carefully flip the focaccia and cook for another 5-7 minutes, or until the cheese is melted and bubbly.
  11. Remove from skillet and let cool on a wire rack. Repeat with the second piece of dough and remaining toppings.
  12. Slice and serve warm.
