Description
A simple, quick meal featuring chicken, zucchini, lemon, and Parmesan cheese cooked in a single skillet.

- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 medium zucchini, chopped
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 teaspoon dried Italian seasoning
- Salt and black pepper to taste
Instructions
- Season the chicken pieces with salt, pepper, and Italian seasoning.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add the chopped zucchini to the same skillet and cook for 3-4 minutes until slightly tender.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Pour in the chicken broth and bring to a simmer. Scrape up any browned bits from the bottom of the skillet.
- Return the cooked chicken to the skillet.
- Stir in the lemon juice and Parmesan cheese until the cheese melts and forms a light sauce.
- Cook for 1-2 minutes more, stirring gently.
- Serve immediately.
Notes
- You can substitute chicken thighs for breasts if desired.
- For extra flavor, add a pinch of red pepper flakes with the garlic.
