Description

Easy one-pot pasta with spinach and artichokes.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 12 ounces pasta
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 14 ounces canned artichoke hearts, drained and chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in vegetable broth and bring to a boil.
  5. Add pasta and cook according to package directions.
  6. Stir in spinach and artichoke hearts during the last few minutes of cooking.
  7. Remove from heat and stir in Parmesan cheese.
  8. Season with salt and pepper.

Notes

  • You can use fresh spinach instead of frozen.
  • Add cooked chicken for extra protein.
  • Adjust the amount of broth for desired pasta consistency.
