Description
Easy one-pot pasta with spinach and artichokes.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 12 ounces pasta
- 10 ounces frozen spinach, thawed and squeezed dry
- 14 ounces canned artichoke hearts, drained and chopped
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened.
- Stir in garlic and cook for 1 minute.
- Pour in vegetable broth and bring to a boil.
- Add pasta and cook according to package directions.
- Stir in spinach and artichoke hearts during the last few minutes of cooking.
- Remove from heat and stir in Parmesan cheese.
- Season with salt and pepper.
Notes
- You can use fresh spinach instead of frozen.
- Add cooked chicken for extra protein.
- Adjust the amount of broth for desired pasta consistency.
