Ingredients

  • 1 lb ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups milk
  • 1 (15 oz) can diced tomatoes, undrained
  • 1 cup elbow macaroni
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Brown ground beef in a large pot over medium heat. Drain excess grease.
  2. Add chopped onion and cook until softened, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Pour in beef broth and milk. Add diced tomatoes.
  5. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Stir in elbow macaroni. Cook according to package directions, about 8-10 minutes, until tender.
