Description
This hearty soup combines the flavors of a cheeseburger with classic macaroni and cheese in one pot.

- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups milk
- 2 cups water
- 8 ounces elbow macaroni
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
Instructions
- Brown the ground beef in a large pot over medium heat. Drain off excess fat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more.
- Pour in the beef broth, milk, and water. Bring to a boil.
- Add the elbow macaroni, Italian seasoning, salt, and pepper. Stir well.
- Reduce heat to low, cover, and simmer for 10-12 minutes, or until the macaroni is cooked through, stirring occasionally.
- Remove from heat and stir in the shredded cheddar and Monterey Jack cheeses until melted and smooth.
- Serve hot.
Notes
- You can substitute other types of cheese for cheddar and Monterey Jack.
- Top with your favorite cheeseburger toppings like pickles, tomatoes, or lettuce.
- Adjust the consistency of the soup by adding more broth or milk if needed.
