  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 2 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • 8 ounces uncooked pasta (penne, rotini, or elbow macaroni work well)
  • 1/2 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides. Remove chicken from the pot and set aside.
  3. Add chopped onion to the pot and cook until softened, about 5 minutes.
  4. Add minced garlic and cook for 1 minute more until fragrant.
  5. Stir in diced tomatoes, cream of mushroom soup, cream of chicken soup, chicken broth, and Italian seasoning.
  6. Bring the mixture to a simmer.
  7. Add the uncooked pasta and the browned chicken to the pot.
  8. Stir to combine, ensuring the pasta is submerged in the liquid.
  9. Cover the pot, reduce heat to low, and simmer for 15-20 minutes, or until the pasta is tender and the sauce has thickened, stirring occasionally to prevent sticking.
  10. Season with salt and pepper to taste.
  11. Serve hot, topped with shredded cheddar cheese if desired.
