A flavorful and easy one-pot chicken burrito bowl.

- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can black beans, rinsed and drained
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 cup chicken broth
- 1 cup uncooked white rice
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp salt
- 1/4 tsp black pepper
- Optional toppings: shredded cheese, salsa, sour cream, avocado, cilantro
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add chicken and cook until browned on all sides.
- Add onion and cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute more until fragrant.
- Add black beans, diced tomatoes, chicken broth, white rice, chili powder, cumin, salt, and pepper. Stir to combine.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
- Fluff the rice with a fork.
- Serve hot, with your favorite toppings.
Notes
- For spicier flavor, add a pinch of cayenne pepper.
- If you prefer brown rice, increase cooking time by about 10-15 minutes.
- You can substitute corn for black beans if desired.
