Description

A flavorful and easy one-pot chicken burrito bowl.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 cup uncooked white rice
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Optional toppings: shredded cheese, salsa, sour cream, avocado, cilantro

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken and cook until browned on all sides.
  3. Add onion and cook until softened, about 5 minutes.
  4. Stir in garlic and cook for 1 minute more until fragrant.
  5. Add black beans, diced tomatoes, chicken broth, white rice, chili powder, cumin, salt, and pepper. Stir to combine.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
  7. Fluff the rice with a fork.
  8. Serve hot, with your favorite toppings.

Notes

  • For spicier flavor, add a pinch of cayenne pepper.
  • If you prefer brown rice, increase cooking time by about 10-15 minutes.
  • You can substitute corn for black beans if desired.
